Madame Bollinger famously quoted "I drink champagne when I'm happy, and when I'm sad. Sometimes, I drink it when I'm alone. When I have company, I consider it obligatory. I trifle with it if I'm not hungry, and drink it when I am. Otherwise, I never touch it, unless I'm thirsty."
Bollinger was established in 1829 by Jacques Bollinger and Paul Renaudin. Over the years their prime vineyard holdings have been steadily increased with the largest expansion taking place under the stewardship of the legendary Madame Lily Bollinger.
Tasting Note: Only produced in exceptional harvests, this is the prestige cuvee of the house. The wine's aroma displays the characteristic Bollinger nose of toasted nuts, freshly baked bread and red fruit characters. On the palate the bread-and-butter pudding flavours are complemented by a streak of crystallised lemon tartness, and the smooth and supple mouthfeel of a surprisingly advanced vintage Prestige Cuvee wine. The fresh fruit flavours will further marry together if the wine is given the chance to age a little longer in bottle.
