Madame Bollinger famously quoted
“I drink champagne when I'm happy, and
when I'm sad. Sometimes, I drink it when
I’m alone. When I have company, I consider
it obligatory. I trifle with it if I’m not hungry,
and drink it when I am. Otherwise, I never
touch it, unless I'm thirsty.”
Bollinger was established in 1829 by
Jacques Bollinger and Paul Renaudin.
Over the years their prime vineyard holdings
have steadily increased, with the largest
expansion occurring under the stewardship
of the legendary Madame Lily Bollinger.
New to Bollinger, Bollinger Rosé is modelled
on the Special Cuvée blend, combining the
fruits of previous harvests plus the addition
of réserve wines from their cellars in Ay.
The final component, which provides colour
and delicate aromas of ripe red fruits,
is a proportion of still red wine coming
exclusively from Bollinger's Grand Cru
vineyards in the Côte d'Ay and Verzenay.
Tasting Note: It is inimitably Bollinger with a fresh, fruity
and yeasty nose with wild raspberries
coming to the fore. The palate is fresh,
clean and succulent with a good
crunchiness and a long, luscious length.
