Moët et Chandon adopted Dom Perignon's name in the late 1920s for their prestige cuvée Champagne, which remains very much in vogue today.
The extraordinary quality of the wine Dom Pérignon devised and produced in the secret, religious fervour of the Abbey makes him one of the greatest visionaries of modern wine-making. Not content with the painstaking selection of only Pinot Noir and Chardonnay grapes, nor the exclusive choice of plots offering the very best soils and perfect exposure, Dom Pérignon categorically insists on choosing only the best harvests and thereafter, a long, slow ageing of the wine on its lees.
Tasting Note: A wine that comes alive in a light, playful spiral, with touches of angelica, coconut, cinnamon, cocoa and tobacco. In the mouth, the wine reaches a state of complex fullness; earthy, smoky and pearly, underscored by the vibrant warmth of peppery spice.
