Madame Bollinger famously quoted
“I drink champagne when I'm happy, and
when I'm sad. Sometimes, I drink it when
I’m alone. When I have company, I consider
it obligatory. I trifle with it if I’m not hungry,
and drink it when I am. Otherwise, I never
touch it, unless I'm thirsty.”
Bollinger was established in 1829 by
Jacques Bollinger and Paul Renaudin.
Over the years their prime vineyard holdings
have steadily increased, with the largest
expansion occurring under the stewardship
of the legendary Madame Lily Bollinger.
She ran the company after her husband’s
death between 1941 and 1977 and worked
tirelessly to establish the high reputation it
enjoys today.
Tasting Note: The grapes originate from mainly Grands
and Premiers Crus of multi-vintage blends,
that have been taken from both young and
réserve wines between five and twelve
years old (magnum aged). These provide
a broad and rich scope to achieve
consistency. Matured for three years,
this is the quintessential expression of
the Bollinger style. It is very dry, but with
toasty flavours in the mouth and round,
richly flavoured, full-bodied and mature
characteristics. Bollinger exudes balance
– perfectly stationed between firmness
and freshness, with a length equal to its
richness and a persistent fine bead.
