An Italian Christmas

Just in time for Christmas, Harrods’ Stelle di Stelle pop-up restaurant welcomes the world-famous three Michelin-starred Florentine restaurant, Enoteca Pinchiorri, for the month of December. Headed up by chef patron Annie Féolde, the mouth-watering menu of signature Tuscan dishes features olive oil octopus with pumpkin cream and coffee pearls, fusilli al ferretto with artichokes, scampi and liquorice powder and an intriguing concoction of bread, chocolate, olive oil and salt for dessert.

In the spirit of a true Italian Christmas, we caught up with our Stelle di Stelle chefs, including Annie Féolde, to talk family traditions, seasonal recipes and how to welcome guests over the holiday season.

Where is your favourite place to spend Christmas?
Since there are 24 [of us in our family], for the past few years we’ve been using the Fireplace Room in Cantalupa [Da Vittorio’s private events location]. Everyone eats their favourite dishes and we listen to the children’s poems, all seasoned with some small tears of joy.
What do you look forward to eating?
Hot chips, sour cream and caviar!

Where is your favourite place to spend Christmas? 
Simply at home, with my mum, dad, brother, uncles and nephews. Spending the holidays with family is beautiful.
What do you look forward to eating?
I love panettone, a typical and traditional Christmas cake.
What are your tips for entertaining? 
Create a warm and homely atmosphere and make sure that people feel at home.

Where is your favourite place to spend Christmas?

My home in France, with my family.
What do you look forward to eating?
Il cotechino, a kind of large spiced pork sausage for boiling
What are your tips for entertaining?
You have to use simplicity and heart; mix them with decorations, music, a few well-paired dishes, [plus] family and friends.

Where is your favourite place to spend Christmas?
No place is better than my home, with my family. We like to cook together; food always seems better if you cook with people you love.
What do you look forward to eating?
I spend Christmas Eve at home, as [the restaurant] is open on Christmas Day, and I like typical dishes like spaghetti alle vongole or insalata di rinforzo, a typical dish where you put together many ingredients, like cabbage, green olives, anchovies and baby onions.
What are your tips for entertaining?
For Christmas, we serve a traditional sample menu and we like to adorn [the restaurant] like a home: in this way, we try to make people feel at home.
