Recipe: Raw Vegan Blonde’s Sunshine Smoothie

To celebrate summer, raw food blogger Amber, of Raw Vegan Blonde, shared a tempting cocktail of tropical delights with us designed to contribute to your five-a-day guideline in one fell swoop. Whip up this quick shake for instant summer in a glass and the ultimate mood-enhancing colour hit.

AMBER’S SUNSHINE SMOOTHIE
This tropical-tasting smoothie is packed with glow-giving goodness from energy-enriching banana, vitamin C-boosting oranges and fibre-rich papaya and mangoes.

Ingredients:
1 medium pineapple
1-2 mangoes
1 large papaya
1 ripe banana (fresh or frozen)
2 large oranges
250ml pure water
Handful of ice cubes

Peel all the fruit and core and de-stone where appropriate. Roughly chop the fruit and add to your blender with the water and, finally, the ice cubes. Blend on a ‘smoothie’ setting or until all the ingredients are liquefied and have a creamy texture. If your blender isn’t very powerful, you can blend the ingredients in stages.

Consume straight away or keep in the fridge in an airtight container for up to two days.
