The Big Green Breakfast Smoothie

"Green smoothies are an easy way to consume a large amount of nutritious green vegetables and if you balance out the flavour with fruit, you can hardly taste them. If you prefer a creamier smoothie, add a ripe banana, half an avocado or a dash of nut milk."

Raw Vegan Blonde’s Big Green Breakfast Smoothie

Ingredients

Half a head of Romaine lettuce
Half a large cucumber
Handful of broccoli florets
2 handfuls of leaf spinach or kale
Small bunch parsley
2 large apples
2 large pears
1 lemon or lime (flesh only)
250ml pure water
Handful of ice cubes

Method

1. Roughly chop the fruit and veg and add the ingredients to your blender, starting with the water, lettuce and spinach first and finishing with the ice cubes. This will give the best blend and avoid any air pockets forming. Blend until smooth and creamy.

2. Consume straight away or keep in the fridge in an airtight container for up to two days.

The Sunshine Smoothie

"A tempting cocktail of tropical delights, this smoothie is designed to contribute to your five-a-day guideline in one fell swoop. Packed with glow-giving goodness from energy-enriching banana, vitamin C-boosting oranges and fibre-rich papaya and mangoes, this shake gives a mood-enhancing colour hit."

Raw Vegan Blonde’s Sunshine Smoothie

Ingredients

1 medium pineapple
1-2 mangoes
1 large papaya
1 ripe banana (fresh or frozen)
2 large oranges
250ml pure water
Handful of ice cubes

Method

1. Peel all the fruit and core and de-stone where appropriate. Roughly chop the fruit and add to your blender with the water and, finally, the ice cubes. Blend on a 'smoothie' setting or until all the ingredients are liquefied and have a creamy texture. If your blender isn’t very powerful, you can blend the ingredients in stages.

2. Consume straight away or keep in the fridge in an airtight container for up to two days.

The Super Berry Smoothie

"Add this health-boosting super berry recipe to your repertoire and your body will thank you for it. This smoothie is sweet, pink and creamy and the super berries provide a great range of vitamins, minerals and antioxidants. The nuts and goji berries are soaked overnight to help give a smoother blend and if you’re allergic to nuts, they are easily substituted with a banana to give a similar, creamy texture."

Raw Vegan Blonde’s Super-Berry Smoothie

Ingredients

400g strawberries
200g raspberries
200g red currants
1 large pink grapefruit
Small handful goji berries
200g almonds and/or cashew nuts
250ml pure water
Handful ice cubes

Method

1. Soak the goji berries overnight in 250ml of pure water (this water will be used in the recipe) and soak almonds and/or cashew nuts overnight in a bowl of water (this water will be discarded).

2. Cut the pith from the pink grapefruit and chop into large pieces. Remove the redcurrants from their stems and chop the strawberries in half, keeping their green leafy tops if they’re organic, or discarding them if they’re not. Drain and rinse the almonds and add to your blender with the rest of the ingredients, including the water the goji berries have been soaked in and, finally, the ice cubes.

3. Blend on a 'smoothie' setting or until all the ingredients are liquefied and have a creamy texture. If your blender isn’t very powerful, you can blend the ingredients in stages. Consume straight away or keep in the fridge in an airtight container for up to two days.
