Of course, Easter is all about chocolate eggs, but let’s not forget about the main event: Easter Sunday lunch. For traditionalists, there will be no debate – it has to be lamb. Reared in the West Country to the highest of welfare standards, ours promises a particularly flavoursome roast – especially in the hands of our Executive Head Chef, Andy Ward. Here, he shares his failsafe recipe for apricot-glazed rack of lamb. Serve with a few sumptuous sides from Food to Order and follow with some truly egg-ceptional desserts, and you’re in for a show-stopping feast.

Apricot-Glazed Rack of Lamb

Sticky, succulent and surprisingly easy to make, this rack of lamb dish is the perfect celebration of spring.
Serves 2–3 as a main


Rack of lamb
4 garlic cloves, sliced 
1.5 tsp thyme, finely chopped 
10 sprigs rosemary 
75ml olive oil 
2 tbsp apricot jam 
1 tbsp wholegrain mustard 
½ tbsp honey
