Chef Tip: How to Grill Wagyu Steak on the BBQ

“Stand the steak at room temperature for 30 mins. Pat dry and season generously, then sear both sides over medium-hot embers for 3-4 minutes for medium-rare (55°C internal temperature). For thicker steaks, leave them on the coldest part of the grill once seared to cook through. Always rest before slicing.”
