Baijiu

Rumoured to be the world’s most consumed spirit, yet hardly ever found outside of the People’s Republic, Chinese baijiu is an enigmatic liquor worthy of a place on the most cosmopolitan bar carts. It offers an extraordinary potency, and while rooted in grain – typically rice – it’s made unique by its reliance on the addition of qu, a yeast-mould composite found in essential Chinese condiments that produces a powerful aroma.
