Billecart-Salmon puts heavy importance on its history, naming this Champagne after one of its founders, Nicolas-François Billecart. 2008 is fast becoming one of the best vintages, giving grapes excellent acidity, and this success translates through to this Brut. The acidity is balanced with a generous character – a result of its 17% maturation in 15-year-old oak barrels – and a low dosage, giving it a mousse-like texture and complex flavour.
