The final product is an intense wine with a bouquet of nougat, dried apricots and plums. Bottled without treatment, it's been drawn straight from the barrel; some cloudiness or sediment is natural and no detriment to this outstanding wine, which pairs surprisingly well chilled alongside rich tonkotsu ramen.
