6 of the Best Truffle Products to Serve This Winter

Words by Bridie Newman

Truffle oil, truffle salt, truffle honey. Truffle shaved onto mac and cheese. Truffle egg mayonnaise finger sandwiches. Truffle fries! You need only visit our Food Halls and restaurants to know how much we adore truffles at Harrods – especially in the chillier months. After all, the prized delicacy pairs particularly well with classic comfort food.

But what exactly is truffle? Grown underground, it’s a fungus from the Tuberaceae family and takes many years to cultivate. Fragrant, earthy and umami-rich, its flavour is often compared to that of mushrooms but far more complex and intense. The taste also varies with the season – summer truffles, for example, have a more delicate, nutty and creamy flavour profile whereas winter truffles are richer and more robust with garlic notes.

Now that we've covered the basics, let's fill your pantry with the finest truffle-enriched condiments for gourmet cooking this winter.

Artisan de la Truffe Winter Truffle Breakings

A pantry staple – especially during the season of hearty winter warmers – these truffle breakings, also known as brisures, are specially processed to preserve their flavour for out-of-season use. Sprinkle them over everything from mashed potatoes and scrambled eggs to pasta and risotto for what we call a ‘gourmet cheat’.

Where to Find Fresh Truffle at Harrods

Black truffles are now available in the Fresh Market Hall. Sourced from Wiltshire in the UK, they’re visually indistinguishable from the summer truffle but have a more powerful aroma and earthy flavour, making them perfect for warming winter dishes. While you’re there, don’t miss the mushroom and truffle croissant on the bakery counter in the Roastery & Bake Hall.

You’ll also find truffle in our restaurants across the store: on rigatoni cacio e pepe at
Pasta Evangelists, on haute dogs at Hot Dogs by Three Darlings, and in egg mayonnaise sandwiches for afternoon tea at The Georgian, to name a few.
